When it comes to updates to the kitchen, it makes sense to seek advice from the people who work in them for a living. Inside Out asks Australia’s most exciting chefs for their insider tips on what works (and what doesn’t) in the cooking zone.

Gas, electric or induction? The best oven option for me is? Gas, because you can easily control the temperature.
The most overlooked aspect of a kitchen is? A wok burner: it’s not just for Chinese meals, I feel Western kitchens can benefit from them as well.
Kylie Kwong
Owner and chef at Billy Kwong
It’s a luxury, but a kitchen isn’t complete without? A large-sized oven. Mine is approximately 90cm wide and is perfect for roasting awhole fish, or a large leg of lamb – two ofmyfavourite recipes to cook and serve at family feasts.
In terms of kitchen storage, you can’t go past? Butchers’ hooks and a wall or ladder to hang themon! You can store somany utensils, pots, pans andwoks on themwhile saving somuch cupboard space for other items, such as crockery and glassware.
My secret weapon in the kitchen is? My round 10cm-thick Chinesewooden chopping board – I’ve had it for years now. I only ever like to prepare food on a wooden surface – I like the look of it and the sound of my knife hitting the wood. I love how the board gradually wears down over the years – so many stories and good times are ‘held’ and shaped by this chopping board.
In my dream kitchen, I’d have? Big open windows and sliding glass doors, with a view of the ocean on one side; a view of the bush on the other; an open fire for placing my wok upon and a large, fabulous Ilve stove and oven for when I want to do steamed or roasted dishes. And, of course, a large 20-seater rustic wooden table for all of my friends and family.
Tetsuya Wakuda
Owner/executive chef at Tetsuya’s and Electrolux brand ambassador
The best thing about my kitchen is? The marble benchtop. Not only is it aesthetically beautiful, I can also work pastry directly on to it.
In my kitchen, I couldn’t live without? My Electrolux induction stove because it’s precise, easy to use and clean.
My best storage solution is? A walk-in pantry.
